potato wedges recipe | deep fried & baked potato wedges with detailed photo and video recipe. a simple potato based snack recipe which is usually served as sides in a fast food or fine dine restaurants with main meals. generally wedges are served with sweet chilli sauce or sour cream with extra seasonings on top of crisp wedges along with burger. potato wedges recipe | deep fried & baked potato wedges with step by step photo and video recipe. wedges are often confused with potato fries which is generally thin and has different shape. wedges have more curvy in shape and has very distinct corners or in other words it can be termed as half moon shaped snack. having said that, it can be cut into waffle, crinkle or even curly shaped wedges too.

in this recipe post i have showed two ways of preparing the potato wedges i.e deep frying and baked in oven. baking in oven is more a healthier option but deep fried are more tastier and crisp. i would recommend to use the baking option only if you have any health concerns, otherwise deep frying is the way to go for wedges. personally i do not like wedges or to be precisely any potato based snack upsets my stomach. but this snack is my brother’s favourite snack and i have to prepare it whenever he visits me.
while it does not have any cumbersome process, yet i would like to share few tips and recommendations for a perfect & crispy potato wedges. firstly, i heavily recommend to use pink potatoes or waxy potatoes for any deep fried or roasted recipes. it contains less starch which helps to hold its shape even after deep frying or baking. secondly, cut the potatoes in even symmetric shape so that they cooked evenly while deep frying. lastly, you can deep freeze the potatoes after partially boiling it. you can deep fry them whenever you require and it should last minimum of 3-4 months.

Ingredients
- 4 medium sized potato
- ¾ tsp salt
- ¼ cup corn flour
- 2 tbsp oil
- ½ tsp pepper, crushed
- ½ tsp kashmiri red chilli powder
- oil for deep frying
- ½ tsp mixed herbs, basil, marjoram, oregano, rosemary, sage, thyme
Instructions
firstly, in peel the skin of potato, use same sized potato preferably less starchy.
chop them to thick wedges cutting each potato to 8 wedges.
further, boil the potato wedges for 3 minutes adding little salt in the water.
drain the water and keep potatoes aside. cool completely.
coat the potatoes with 2 tbsp oil.
further, add ¼ cup corn flour, ½ tsp pepper, ½ tsp chilli powder, ½ tsp mixed herbs.
mix well making sure the corn flour gets coated uniformly. freeze the leftover potato wedges and use for atleast 3-4 month.
bake at 180 degree celsius for 15-18 minutes or till the potatoes are golden and crisp.
alternatively, deep fry the potatoes into hot oil.
stir occasionally, till the potatoes turn golden brown and crisp.
sprinkle wedges with salt and chilli powder before serving.
finally, enjoy spicy and crispy potato wedges with tomato sauce.
