Commonly Asked Questions

How do you make scones moist?

It’s all about the fat used in the scones and baking them at the right temperature for the right amount of time. In this recipe, I use yogurt, but you can also use sour cream or buttermilk.

Can I use strawberry jam instead of fresh strawberries?

That is a great question, and I say go for it! I am going to try that myself next time. I think it could work, I would just use ½ cup of fresh strawberries and ½ cup of strawberry preserves.

Can I freeze the dough and make it later?

Yes! You can make the dough as instructed in the recipe, wrap in plastic wrap, and freeze it until ready to bake. You will need to sit the dough at room temperature to let it thaw.

Description

Enjoy these Strawberry White Chocolate Scones for breakfast or brunch! These scones are made with white chocolate, strawberries, and yogurt for a soft interior.

  • 3 1/4 c. flour, more for kneading
  • 2/3 c. sugar
  • 1/2 tsp. salt
  • 1 tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1 stick cold butter
  • 1 c.plain yogurt
  • 2 tbsp. milk
  • 1 large egg
  • 1 1/2 tsp. vanilla extract
  • 1 c. diced strawberries
  • 1/2 c. white chocolate chips
  • 4 tbsp. butter, melted
  • sugar, for sprinkling
  • FOR GLAZE
  • 2 c. powdered sugar
  • 2 tsp. Vanilla extract
  • 3 tbsp. Milk

Instructions

  1. Preheat oven to 375 Degrees.
  2. Add the flour, sugar, salt, baking powder, and baking soda in a large bowl and whisk the ingredients together. Make a well in the middle of the bowl and cut in the cold butter.
  3. Use a fork or pastry blender to blend the butter into the flour mixture until the flour mixture looks like coarse crumbs. Recreate the well (hole) in the middle of the bowl once again.
  4. In a small bowl, mix the yogurt, milk, and vanilla extract (if you rather use buttermilk, you can just add the vanilla to the buttermilk). Pour the liquid into the middle of the bowl and take both hands to mix the liquid with the flour mixture until well mixed.
  5. Crack in the egg and continue to use your hands to mix. Add the strawberries and white chocolate chips, and fold them in using your hands to weld all the ingredients together. The dough will still feel slightly wet. This is okay.
  6. Once all ingredients are well mixed, set aside for 5 minutes so the flour can absorb more liquid. Dust with flour on a clean, flat surface and turn the dough onto the lightly floured surface.
  7. Sprinkle the top of the dough with a little more flour and delicately knead the dough 2-3 times. Pat the dough into a round 1-inch thick circle.
  8. Use a serrated knife, cut into triangles, and place on a baking sheet lined with parchment paper. Once the dough is cut and placed on top of the baking sheet(s), place it in the refrigerator for 15 minutes.
  9. Brush some melted butter on top, sprinkle with turbinado sugar (if you don’t have it, regular white sugar is fine), and bake for 15-20 minutes or until golden brown and set at the edges. Allow cooling for 10 minutes before serving.
  10. To make a glaze, combine powdered sugar, vanilla extract, and milk and whisk together until smooth. Brush or drizzle the tops of the scones with glaze. Allow the glaze to set before serving.

Thought these were great. My son really liked them. I left out the chips because I didn’t have any one hand but had a glut of strawberries. Will definitely make these again. Thanks!

FAQs

Why are my fruit scones dry and crumbly? ›

Overworking the dough will lead to scones that are tough and chewy, rather than light and flaky. The less you knead the mix, the less the gluten will tighten up – which means your scones will stay loose and crumbly, rather than tight and springy.

What does brushing scones with milk do? ›

Brushing scones with milk or cream before baking yields a golden crust. For deeper color and added shine, brush with egg wash: 1 whole egg mixed with 1 tablespoon water and a pinch of salt.

How does cream of tartar work in scones? ›

When combined with baking soda, it becomes a leavening agent (the stuff that makes baked goods puff up in the oven) by producing carbon dioxide gas. If you ever run out of baking powder, you can substitute 1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar for 1 teaspoon baking powder.

Does baking soda make scones rise? ›

Always use well-chilled butter! Also, make sure you use the correct amount of baking powder or bicarbonate of soda in the recipe. These leavening agents release carbon dioxide which escapes in the form of bubbles when heat is added – these help the scones rise properly and give them a light and fluffy texture.

What to avoid when making scones? ›

5 Mistakes to Avoid When Baking Scones
  1. Using anything but cold ingredients. The secret to the flakiest scones is to start with cold ingredients — cold butter, cold eggs, and cold cream. ...
  2. Only using all-purpose flour. ...
  3. Overmixing the dough. ...
  4. Not chilling the dough before baking. ...
  5. Baking them ahead of time.

How to get scones to rise high? ›

To ensure taller scones, start with a thicker dough disc and place the scones on a tray with sides, allowing them to slightly touch one another. This arrangement encourages the scones to push against the pan and each other, promoting height.

When making scones, should the butter be cold? ›

Butter must be COLD from the very start to when the dough enters the oven. The cold butter melts upon entering the oven and the water content in butter evaporates in steam. As the steam escapes, it bursts up and creates that beautiful tall, flaky, fluffy texture.

Why do you rest scones before baking? ›

The resting of the dough helps to relax the dough so everything remains tender, if you kneaded the dough and baked the scones immediately the insides would be great but the outsides would be tough and chewy.

Should you sift flour for scones? ›

Don't forget to sift!

Be sure to double or even triple sift your flour, as it takes away the clumps in the flour allowing for more air pockets in the scone dough - the result being a fluffier and more crumbly scone.

Can you put too much baking powder in scones? ›

Too much baking powder can cause the batter to be bitter tasting. It can also cause the batter to rise rapidly and then collapse. (i.e. The air bubbles in the batter grow too large and break causing the batter to fall.) Cakes will have a coarse, fragile crumb with a fallen center.

Why do my scones go flat and not rise? ›

Why Are My Scones Flat? Expired leavening agents. Your baking powder and/or baking soda could be expired. Most scone and biscuit recipes call for quite a large amount of leavening, and if either are expired, your scones simply won't rise to beautiful heights.

How do you keep scones from being crumbly? ›

You want to work the dough just enough to add some structure, until the dough is smooth and supple, which does two things. Firstly it develops the gluten allowing everything to hold together, preventing crumbly scones.

How to stop scones from being dry? ›

Don't overbake! If you bake scones too long, they'll dry out, so keep an eye on them through the oven window. (Don't open the oven to look — it'll let out the heat.) “Bake your scones until they are just golden brown,” Bethany recommends.

How do you moisten dry scones? ›

Put the scones in the microwave with a small glass of water, as the water will put moisture back into the scones without leaving them dry.

Why is my fruitcake dry and crumbly? ›

Cakes crumble because they've dried out too much. From years of baking, I know that dry cakes happen for one of two reasons; using too much of your dry ingredients or over-baking your cake.
